Lentil soup

Lentil Tomato Soup 

1 tbsp olive oil for sautéing
1 onion, finely chopped
1 celery stock, chopped
2 carrots, chopped
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp paprika
1/2 tsp cayenne pepper
1 cup  brown lentils

1 TBL salt

1 can tomatoes, including liquid

*Here you can use fresh or canned tomatoes*

1 TBL tomato paste
4 cups water or vegetable stock
Salt and pepper to taste

Cook the lentils and herbs with half the salt in the stock until tender.  Sautee all vegetables with olive oil and salt.  Add vegetables to stock and lentils.  Season with salt and pepper.Image

Sweet Potato Soup


Sweet Potato Soup 

3 medium sweet potatoes

2 carrots

3 large celery stalks

1 large red onion

2 shallots

5 cloves of garlic

1 large chunk of ginger

2 tsps ginger

1 tsp cayenne pepper



Cut all vegetables into  large chunks.  Roast at 425 F for 10 mins, shake pan or flip vegetables.  Roast another 10 mins.

Puree with vegetable stock and 1 can of coconut milk.  Bring to a simmer and serve. Garnish with cilantro leaves.
